Herby G/F loaf a.k.a 'Fake-accia'



I simply love Italian Focaccia but it's one of those breads that is my kryptonite.


I didn't set out to make a focaccia type bread but with the beautiful rosemary flavour and the lightness this turned out to be very more-ish.


Rosemary needs no introduction as one of our most favourite Mediterranean herbs.

Studies have shown that the carnosic and rosmarinic acids in rosemary have powerful antibacterial, antiviral, and antifungal properties. So, consuming rosemary regularly can potentially help lower the risk of infection and help the immune system fight any infections that do occur.

Perfect for this time of year.


Interestingly , in 2020 a research review concluded that, these compounds can provide promise in the treatment of the nervous system pathological conditions, including anxiety, depression, Alzheimer’s disease, epilepsy, Parkinson’s disease, and withdrawal syndrome.


RECIPE


You will need :

Loaf tin 5x9 inch

Parchment liner

Fresh Rosemary, a couple of teaspoons chopped leaves and some to decorate

Dry Ingredients:

2 1/4 cups ground almonds

1/4 cup ground flaxseed

1 teaspoon baking soda

1 teaspoon Himalayan salt

Wet Ingredients:

4 large eggs or 5 small

1 1/2 tablespoons coconut blossom sugar

1 1/2 tablespoons melted coconut oil

1 tablespoon Apple Cider Vinegar


Method:


Preheat your oven to 180. In a large mixing bowl combine all the dry ingredients and mix well.

In another bowl add the eggs and whisk until combined. Then add the rest of the wet ingredients.


Slowly, add the wet to the dry, mixing well until you have a thick batter-like mix. Add in the herbs, stir gently to combine so as not to knock out the air. Pour into the lined loaf tin (it will not fill the tin).

Bake for around 25 minutes or until a cake tester comes out dry.

Leave to cool and enjoy with soups or for breakfast .
